ABOUT

Our History

Sans Souci Restaurant has been proudly family-owned since its founding in 1993 by Walter Evilia. Former Mayor of Meriden from 1977 to 1981, Walter was a veteran of the food business. He previously founded Snack Time Vending as a young man, which he sold in the mid-80s. He then became co-owner of The Cabin Restaurant in Meriden before retiring in the early 1990s. Walter soon realized retirement wasn’t for him.

When a new restaurant space became available on the Berlin Turnpike, he jumped at the chance to start a family-friendly, American restaurant for the citizens of Meriden. Today, the restaurant is owned by Walter’s daughter, Marna Evilia, whose own children can be seen working alongside her at Sans Souci.
